The Fruit Base:

  • 1 kg ripe fresh plums (halved, stoned, and quartered)
  • 1 ½ tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 2 tbsp water or fresh orange juice

Golden Almond Crumble Topping:

  • 120g jumbo rolled oats
  • 80g flaked almonds
  • 50g ground almonds
  • 60g cold unsalted butter (cubed)
  • 3 tbsp maple syrup
  • ½ tsp fine sea salt

Method

  1. Prep the Fruit: Preheat your oven to 180°C (160°C fan). Toss the quartered plums, cinnamon, vanilla, 2 tbsp maple syrup, and water or orange juice together in a large baking dish (approx. 20×30 cm) until fully coated.
  2. Pre-Roast the Plums: Bake the fruit base on its own for 12–15 minutes until the plums soften and release their rich, ruby-red juices.
  3. Make the Topping: In a large bowl, combine the oats, flaked almonds, ground almonds, and fine sea salt. Add the cold cubed butter and remaining 3 tbsp maple syrup. Rub together with your fingertips until incorporated, leaving plenty of chunky, pea-sized oat clusters for texture.
  4. Bake to Perfection: Remove the baking dish from the oven, scatter the crumble topping evenly over the warm plums, and bake for 20–25 minutes until the topping is deeply golden and the fruit juices bubble up around the edges.
  5. Serve: Rest for 5 minutes before serving warm with fresh custard or a scoop of vanilla ice cream.
