STRAWBERRY TOP SYRUP

Most people don’t realise that the "hull" of the strawberry still carries an incredible amount of flavor and natural pigment. By simmering them down, you aren't just reducing food waste,  you're creating a delicious syrup that puts store-bought versions to shame.

 

Prep time: 5 mins | Cook time: 20 mins

What you’ll need:

  • At least 1 cup of strawberry tops (it’s fine if there’s a little fruit left on them!)
  • 1 cup granulated sugar
  • 1 cup water

The Method:

  1. Combine: Place your strawberry tops, sugar, and water into a small saucepan.
  2. Simmer: Bring to a gentle boil, then turn the heat down and let it simmer for about 20 minutes until the liquid turns a deep, jewel-toned red.
  3. Strain: Pour through a fine-mesh sieve into a jar or bottle.

Stir it into cold sparkling water for a homemade soda, use it to sweeten a matcha latte, or drizzle it over vanilla bean ice cream during a garden lunch.
